Sue, Potato Skins? Ha...One of these potatoes are a meal in itself...=) Very good and very filling. Used garlic and cheese Italian sausage and it was excellent!! I bet these would freeze well for a quick make ahead meal. Can't this time. There weren't any leftovers! Thanks for posting. Barb

We had these for supper the other night. Delicious doesn't even begin to describe how they tasted. I used chorizo sausage and shredded nacho cheese mix. The topping had a spicy flavor and was very easy to make. We all LOVED them. Thanks Sue L for another outstanding recipe. Love ya

Excellent recipe. I used bacon instead of sausage and seved these with steak for a wonderful meal. Will be making again soon-Grey Cup is this weekend in Canada!

We really enjoyed these babies! Nice and spicy and great dipped in sour cream. I would suggest you use fairly small potatoes though, as ours weren't very big at all and we used every drop of the chorizo/salsa filling to cover the 16 skins. Instead of the nacho sauce, we used grated cheddar cheese on top.

One word: Great! Used Chorizo from local butcher! Next time I will add a little Stiton cheese to the sauce with a little hot pepper flakes. Thanks for a great recipe

HHmmmm...We liked it, just didn't love it. We found that the taste was somewhat lacking. We followed the recipe exactly, I just don't know what was missing. Aroostook is right, these are great for filling you up! Maybe some garlic next time. thanks for posting!

These are great! Since I first made them they were such a hit I now make them for my family all the time. I tinker with the meat some, and use shredded cheese. And I agree, they are filling. I like to make thim on days I'm poking around the kitchen and make them in stages.
