Excellent lunch! So quick & easy & a nice change from "soup". I whipped this up with literally, a few leftovers in my fridge. I used the spicy beef flavored ramen, about a half an onion, pre-matchsticked carrots & the rest of a purple cabbage I wanted to use up. The only change I made was to use half sesame oil & sprinkle some sesame seeds on top as garnish. This made a new & exciting lunch for DS & I yesterday. I was taught this by a Japanese neighbor of my aunts a LONG time ago! At times we throw in leftover steak or chicken as well. A sprinkling of soy sauce and you have a wonderful light meal!
