Here's an adaptation to experiment with...I slice a small rectangle of the recipe to eat as finger food when I drive to work..It was a little "gooshy"...after all I was eating a variation of a custard...SO I added 1/4 CUP BISQUICK to the milk and it firmed up nicely, and ROSE a bit, so my rectangles were too thick for my tastes S0 I next prepared the same variation and poured the mixture into a LARGE tomato juice can lined with foil (for removal)and baked it in an overflow tray. In an hour I had a sliceable, cylindrical loaf that I could slice into a disc for easy eating on the road (Dont use the STOVETOP SOUTHWEST RECIPE dressing mix...it makes the recipe taste like a CURRY! I have to admit, I was skeptical about the Stove Top Chicken Dressing but it was a fabulous addition!! No one could figure out the secret ingredient.

This recipe was so easy and tasted great. I ended up having to make another one because the first one was such a hit. I did modify it to make it lowfat. For anyone who's interested here's what I did. I used eggbeaters instead and used the equivalent of 8 eggs and reduced the milk to one cup (skim milk) I also used fat free cheese. Instead of ham or sausage I used diced turkey. I also added green peppers, mushrooms, and onions. This recipe is so versatile you can add whatever veggies or meat you want. Thanks!

I love this casserole. I use a regular size box of stuffing mix and that is approx 2 cups so it works fine. Ham is the favorite but we have used any kind of meat and even combos to great results. The best part is that is cuts very nicely into squares and then freezes great. So easy to grab one out of the freezer and pop it in the microwave at work for a quick breakfast at my desk. Beats the vending machine or a donut. Thanx Merlot for a keeper!

Made this for breakfast this morning...it was really good. I used country sage sausage instead of ham, and it was great. My 20-month old daughter ate 2 helpings! I think next time I will add a little more cheese, and maybe some chopped onion, but otherwise it's great just like it is.

Very tasty breakfast casserole! I made this for our weekly "Friday Breakfast" at the office and everyone loved it! I used ham. They couldn't guess the secret ingredient... the stuffing! I baked it in a 9X13-inch baking dish, but it came out thin. Next time I will bake it in a 9X9-inch baking dish... or better yet, I will double the recipe and bake in the 9X13-inch dish! Thanks for a great hit!

This is great. I have made it 2 times now. once as written & again by adding chopped onions & chopped green pepper. Very easy.

I made this breakfast cassarole on Sunday morning for my Cajun relatives who came into town to stay with us for a week. It's a very simple recipe and it really tasted great. I served it with fresh fruit salad (cantelope, red grapes, green grapes, strawberries and apple slices) and the relatives could not stop raving about it. I used 1 box dry chicken stove top stuffing mix, a 1 pound (roll) Jimmy Dean Regular Sausage cooked, drained well and crumbled, 8 eggs, and 2 cups shredded colby/jack cheese divided. I used a 9x13 baking dish that I sprayed with vegetable oil cooking spray and I sprinkled the top of the cassarole with the extra cup of cheese when the casserole was finished cooking and let it melt in the oven which took about 5 extra minutes. I should have made 2 casseroles for my relatives as it was gone in a flash. I'm so glad I had the fruit too. Thanks for a crowd pleasing, easy, great tasting breakfast recipe! I'll be making this again and again! Even the kids loved it!

Merlot, what more can I say! This is an excellent breakfast casserole (even though we had it for supper). I couldn't find the chicken stuffing mix in the canister, so I used a box of Country Style stuffing mix. The stuffing seasoning gave it a great flavour. I also used sausages cut into chunks. DH loved it and it will be a regular menu item in this house! Thanks so much for sharing!

What an excellent casserole. I made it for this weekends breakfast. I cut the recipe in half and baked in an 8 x 8 square glass baking pan and it turned out nice and high and puffy. I cut the mixture into three, hubby and I had each 1 for breakfast and I had 1 left over for my next breakfast. My only regret is that I did not do the whole batch. Next time....this is definitely a keeper.
