I was so happy to find this recipe, as it reminded me of when my mother sometimes made her porkchops this way and I always loved them. My 17 yo DS doesn't like pork chops at all, so I tag them and make them for lunch for me. I really enjoyed this pork chop for lunch today with some leftover baked beans. Next time I might fry them to help keep the coating on better, as it stuck to the pan as the coating absorbed the cooking spray so I then added a little oil which helped keep it from sticking.
