YUM! I used this to decorate Mean's own German chocolate cake. Terrific ganache--easy to make and easy to apply to the sides of that huge three-layer cake. It was also delicious. If you're making Mean's German chocolate cake recipe, though, and just using this to frost the sides, HALVE THE RECIPE! This made MUCH too much.

    Very well textured, with a creamy consistency. Spreadable at room temperature and firm but not hard when cold. I have made two batches, one all bittersweet chocolate, which was heavenly, and the other I substituted 1/2 semi-sweet chocolate, also wonderful, and a bit less intense.

    Wonderful! I topped off a cheesecake,Fudge Truffle Cheesecake, with this recipe. I used half bittersweet and half semi-sweet. Darn my sweet tooth, lol ! Mean Chef, every one of your recipes are top notch. Thanks so much for taking the time to post them. !!

    I will not rate this due to my mistake but just a warning, do not take your eyes off the simmering butter and cream. Mine boiled over and I did not wait long enough to let it cool back down so my chocolate seized up. I would use this recipe again but probably use the double boiler method.

    Excellent ganache and so simple to make. I used good quality bittersweet chocolate. It was ready to put on the cake in about 20 minutes or so. Generous amount for one cake. Therefore, just eat remaining ganache with a spoon!

    This was wonderfull. Simple to make. I did sub, 2 tablespoons of the cream with equal amounts of brewed espresso. I used this as crowning touch for an espresso cake I made. Everyone loved it. Thank you Mean. gibblet

    This recipe was so easy and the taste is simply decadent! This is the first time I have had my ganache come out just right. I had extra ganache leftover after frosting a two layer cake. My family was fighting over who would get the last scrape of the bowl!Simply fantastic!Thanks Mean Chef!
