Oh...wow! This is good. The meat is so tender and full of flavor. I marinated for 24 hours and I cooked it on the grill for about 45 mins. Came out with a nice crust. Made on a short RV trip with family and it got raved reviews all around. This is a keeper. Thanks for posting.

This just had a little bit of a weird flavor for us...I'm not sure what it is, but it just wasn't "our thing". I made exactly as posted, except I didn't quite have a whole tablespoon of the lime zest. It was easty to prepare and cook though. Made for PRMR Tag.
