This was pretty good, and was a great way to use up the apples that weren't pretty enough to eat out of hand. I used apple pie spice, just because I like it better than cinnamon. I also topped it with some crushed gingersnaps because I was in the mood. I bet the apple mixture would be good for breakfast with vanilla yogurt instead of pudding. Thanks for posting!
