Made this last night and served it along with marinated tuna steaks...YUMMO! I did mince the garlic and left it in along with adding some diced onion and some mushrooms. I had homemade chicken broth I used which I think gave it even more flavor. Definately will make this again.l

Awesome! The flavors are nice and different for a rice pilaf. I used the zest of a whole lemon and it's juice, and minced the garlic and left the garlic in the rice. I could taste the lemon, carrots, and garlic, nothing was overpowering. Thanks for this fab side dish!

I really loved this, even though I goofed up. I minced 3 garlic cloves, so they could not be removed before serving. However, the taste is phenomenal (and the garlic did not overpower the lovely lemon flavor). I will be making this often! Made for Please Review My Recipe Tag Game.

This went right into my 10-star cookbook! Nice color from the carrot and great lemon flavor. Went well with chicken and would be good with fish, also! Easy to put together, and looks great on the plate. Thanks for this keeper!

I can't believe how good and tasty this is. I used 2 tablespoon of extra virgin olive oil instead of butter. I loved the taste of the carrots in this. This is easy to do. Thanks Gailanng

We loved this wonderful little rice dish. The flavours blended together perfectly. The lemon was neither too sharp nor too strong- I really liked the use of zest rather than juice. I must admit I crushed the garlic and left it in there- lemon and garlic go so well together! Thanks for a definite keeper of a recipe!

A wonderfully garlicky, lemony rice dish. I minced my garlic and left it in the final dish. As a garlic lover, I could contemplate adding more but not removing it! I used baby carrots and they added a delicious sweetness to balance the lemon flavour. We enjoyed this with Grilled Basil Lemon Chicken. This is a rice dish that would complement most meat dishes. Made for Potluck Tag for Hokie's Family Favorites & Memories Party. This is certainly being filed among my rice side-dish favourites. Thanks for sharing this yummy recipe, gailanng. The only change I'd make in future would be to add some nuts - slivered almonds or pine nuts - right at the end for some textural variation and because I love adding nuts where I can see an opportunity to do so!
