This has been my standard recipe for homemade nutella for years. You can get a paste out of the hazelnuts if you process them in a very strong food processor until they get hot. They will form a ball around the blades of the processor and then become a paste. Just keep processing long enough. This is very good with cashews or cashew butter, too, and also, as Kasha says, if the hazelnuts stay a bit gritty

OH YUM! I've made this with ghee so it would be casien (dairy) free for my family and it turned out wonderful. And my kids thank you ,too.
