1 Review of Chrissy's Mediterranean Chicken

I made this exactly as posted, except I didn't know if I should drain the canned tomatoes (I used fire-roasted), so I didn't. Even though my chicken breasts were rather large, I did have leftover stuffing mixture. The chicken cooked up very nicely and, overall, it was quite tasty. However, it wasn't as visually appealing as it tasted. The color of the chicken was white and pale. I think maybe baking this outside of the foil packets for some of the cooking time might give it a little color, or even a quick run under the broiler. Thanks for posting this one!
