I replaced the oil with applesauce, and made the recipe in a square pan, as for a snack cake. Worked great, and got the fat out of it. A real quick, easy, keeper!

These are so easy to make, it took hardly no time and effort at all. Nice flavour, mine got a little burnt at the bottom though, but that's probably because I'm still getting used to baking in a gas oven! I'll definitely make these again when I want a quick treat and I might also try using different fruit!

I love these muffins! I made only 1 SLIGHT change and that is to take the strawberries add the sugar and let that sit about 30 minutes...good juice!!! then everything exactly as written. The juice from macerating the strawberries really filtered through the muffins! When I make them I can't keep them very long...kids eat em as they come out of the overn!

I wish I could give this 10 stars. I did make some changes though. I sub'd the oil with cinnamon applesauce. I used self rising flour its all I had. I used 1 cup of mixed frozen strawberries with peaches, then I added 2/3 cup canned peaches. I then topped the muffins with a little coconut and sugar. This was a great recipe, and I think a good one to keep on hand because I think it has a few possibilities. Thanks for your recipe.

We loved these muffins. They were very easy to make. I used part whole wheat flour and they were still light and tender. I will definitely make again.

wow!!! this was my first time making muffins of any kind, so I was a little nervous — but I figured I couldn't go wrong with a kid-friendly recipe! these impressed me by being EVEN better than I thought they would be! I followed the recipe exactly and this is one of the few I would not change a SINGLE thing about! PERFECT recipe! I especially loved these out of the oven when the strawberries were warm and gooey! mm! will be looking forward to snacking on these this week. thanks for a keeper!

I used no oil (replaced with applesauce) and subbed whole wheat flour for half of the white flour. I also added about a half cup of chopped canned peaches. These were delicious! Thanks!

Great, quick treat. Next time I may try whole wheat flour for the extra nutritional value. However, these are a great fast breakfast and miles above any donuts. My neice (10 yrs old) LOVED these and said the only change she'd make would be to add more berries. Note: I have made this recipe many times since making my review (above) and this recipe never disappoints. Last night, with a huge pile of strawberries and blackberries to work with, I decided to make this in a 9x13" pan. I doubled the recipe and substituted 1/2 of the oil with applesauce. Baking time was 35 minutes and the result is fantastic. This is a recipe that you are sure to make for years to come because of its ease and incredible taste.

Very Nice Muffins! I used strawberry-blueberries for the fruit. I would try any combo of fruit. Next time i will use applesauce over oil, for flavour. Really ripe fruit would be great as well. I cooked at 375 for 18 mins.

My 5 year old daugher and I made this recipe using the applesauce and 1/3c splenda 1/3c sugar. I used 2/3c berries and 1/3c peaches. It came out good although I would add much more berries next time. The muffins were very moist and sweet, they did stick to the paper liners but that might be because I used the applesauce. Good recipe. Easy enough for a 5 year old to do everything but put in the oven!
