This was a wonderful recipe everyone in the family loved! Put it over tortilla chips with sour cream and lettuce. It was a nice spicy, enough to make your tongue tingle. But not so much to make your nose run. I used 16 ounces of tomato sauce instead of the tomato juice, a 10 ounce can of Rotel tomatoes and green chiles instead of the tomatoes and jalapenos, and added a 15 ounce can of black beans plus the liquid in it. Didn't add the bell pepper since I don't care for them and stirred the cheese into it instead of putting it on top. This WILL be in my regular recipes for my family! Thank you!

I made this for dinner last night and our household was full of smiles! I didn't use the onion or green pepper (my husband doesn't like). I used diced tomatoes with green chilis, extra lean meat, brown rice and fat free cheddar cheese. Added fresh jalapenos, extra hot sauce and tortillas. Thank you so much for this recipe. My husband won't let me forget this one!

I made this for supper and my husband and I were very happy with the way this tasted. Spicy but did not burn our mouths. I also liked it because it was easy and I didn't have to spend all night in the kitchen. Thanks Nurse Di.

Nice recipe suitable for the whole family.We cant get the tomatoes stated in the recipe here in Australia either but I just substituted with reg tin tomatoes and stack loads of jalapeno's (love 'em)I didnt have any tomato juice on hand either so used tomato paste and water.I served with shredded lettuce,sour cream and corn chips.Yummo!!

This is so easy to throw together and really tasty. I can't get the Mexican stewed tomatoes in the Uk so I just used a can of regular ones and added a little some chopped jalapenos, tacco seasoning and a little oregano, it worked great. I also added mushrooms to it as I had some that needed using up, but otherwise followed the recipe as it is. I served it with some tortilla wraps. Thanks for sharing.

Really good! 3 cups of cooked rice is about 2 dl (just under 1 cup) of uncooked rice should you not have cooked rice handy! Like Erin, I also used only 1 cup of tomato juice as I like 'drier' food. I also stirred the cheese into the mixture and then baked the whole thing, uncovered, in 200 C for about 35 minutes. Yummy! I will double the amounts of spices next time, but that's just our we-like-it-hot preference!

This recipe was really good, but I made a few changes: The addition of a little more ground meat, less rice (1 1/2 c), and 3 tsp chili powder. I also think a can of black beans would've been good mixed in and I'll do that next time. Definitely a keeper...has great flavor!Thanks NurseDi!

Great rice dish. I added some minced garlic to cook with the ground beef, onions, and peppers. I agree that it was seasoned well but not too hot, which makes it kid friendly. A very simple and easy recipe to make. Thanks Nurse Di.

This was so yummo. A BIG hit with the family. Another Australian here, so I could not get tinned tomatoes with the jalapeno chillies, so I added a good quantity of jalapeno chillies to a tin tomatoes. This was such an easy dish prepare for dinner after work as I cooked the rice the night before. I served with shredded lettuce, light sour cream and white corn tortillas.
