mmm... Great Christmas Eve-morning breakfast. I served them with boiled eggs and orange slices. My family realy liked them. I didn't have applesauce or molasses so I used a pealed and chopped apple and dark Karo syrup. But I can't wait to try them with molasses which is much more nutritional. Thanks for sharing! Liz

These are delicious. I made them this morning and as I did not have any applesauce I used grated bramley apple. I also added 1 knob of preserved stem ginger which I grated and 1 teaspoon of ginger syrup from the jar. Next time (and there WILL be a next time) I will add some orange zest. I baked them as jumbo muffins and got 6 lovely big ones. Wasn't sure how much sugar to sprinkle on top so sprinkled a healthy teaspoon on top of each and was rewarded with a lovely sweet white crackly surface on top. Thanks for a fabulouse muffin that I am eating as I type. Yummm!!

These were really good muffins, thank you very much Ocean! I made them in to jumbo muffins last night, just a personal preference, and had the first one this morning on my way to work. A wonderful start to the day!

Wonderful!! I made this recipe in an 8x8 cake pan, because my husband doesn't care for muffins. It turned out beautifully and the time was the same. I think next time I will add a little orange zest-you know how we Zaars love to tweak everything! Carole in Orlando

This recipe is wonderful. I increased the amount of applesauce to 1/2 cup and omitted the oil. (I am experimenting since my father MUST follow a low fat diet now and I am the health conscience one) I will be adding some ground flaxseed meal the next time to add a little fiber to it but otherwise they are VERY moist and VERY tasty. I should mention that I used a large muffin pan and made 6 big muffins and they had to cook about 6 mins longer. Extremely good! I am eating one right now. As my 18 month old would say "Yummy"!

Ditto. Plan to make these every Christmas. Made them into gingerbread muffin men using gingerbread shaped pans. Very cute and the kids loved them.

Very tasty! I used the molasses, but subbed Splenda for the sugar. I used my smallest muffin tins and only got 11 muffins, though! Thanks for posting this!
