116 Reviews of Black Bean and Tortilla Bake

From: Blissful74

This is ver good! I used both flour and corn tortillas since I had both on hand to use up. Using the Flour tortillas on the bottom helped hold it together. I used a whole 15oz. can of tomato sauce, canned stewed tomatoes, chopped, extra green onions and 2 garlic cloves instead of 1. I also added a few pinches of sugar to help cut the acidity of the tomato products. Yum!

Very good comfort food. In order to satisfy my carnivore hubby, I added some of the shredded chicken leftover from Tahiti's Chicken Tacos (Chicken Tacos - the Tahiti Way). Because of this addition, I also needed a bit more tomato sauce in order to keep the filling moist (and soften the tortillas as they baked). The flavor of this dish perfectly fit the comfort level. It wasn't too spicy, but had a nice subtle heat...it could easily be spiced up (addition of jalapenos or cayenne pepper to the bean mixture), for those times when you just feel like more heat. Good weeknight or even casual entertaining fare.

Quick, easy & delicious! I used 12 ounces of my home-made tomato sauce which is fairly spicy, whole wheat tortillas & a combo of cheddar & monterey jack cheeses - with salsa & sour cream on the side. Thanx Meow!

This was an easy recipe to put together and it has a delicious blend of flavors! I used regular cheese as that is what I had on hand. I served it with condiments of picante sauce and sour cream. (I will probably add a bit more tomato suce next time, but that is just a personal preference.) If my family is any indication I would plan on this serving 4-5 people, not the 6 indicated in the recipe. I guess that's a statement about the recipe in itself! Thanks for sharing this recipe!

YUM! This is delicious. Tastes like an enchilada with black beans inside. It served 4 for our family, not 6. It is too yummy to serve 6, you'll run out!

Easy to make, tasted well, but very rough on the stomach. It is good, but just be careful if prone to indigestion.

I am not a big black bean fan so I made it with pinto beans and it was wonderful! We added this recipe to our menu rotation~we really liked it!

Great Recipe! I used flour tortillas due to personal preference and fresh black beans. I had no problem serving six with this recipe. These will become a regular item at my house. They are Fantastic!

IT was a great dish. I added a few things to it though. I added some cream cheese and left over roast. It was very good. Thank you.

YUMMY!!~~~ I am so happy I tried this! I did add picante sauce and used a mexican cheese blend in place of the low fat cheddar. Thanks for sharing Meow. I will be making this often.
