This was really good and really easy. I added fresh chopped tomatoes at the end and I was out of sour cream, but next time I'm going to add that as well. I think that would make it perfect. Oh and don't be worried about the amount of taco seasoning....it smells really really spicy when you pour it in...scared me a lot! But it ended up being nice and mild but with a little bite. this is definatly a keeper.

This is a simple recipe, that can easily be adapted. I only had regular long grain rice, so I adjusted my liquid accordingly and cooked for longer - still had good results (just not as fast a recipe). I added 3 cloves of minced garlic as I cooked the chicken, and I used chix stock in place of water. I left out the red pepper - I didn't have any - kids don't like it much anyway and I added 1 can of drained, rinsed black beans. We served in warm flour tortillas with lettuce, sour cream and salsa. We liked it very much, similar to a recipe I have made before, but forgotten the recipe for!! Thanks for posting. I will keep this recipe to make again, and get Minute Rice to have on hand to make this a quick, easy and tastey weeknight dinner!!!!

This was very good and easy to throw together. Next time I make it, I'll use cooked brown rice instead. This reminds me of another dish I make...using Italian sausage and adding some red kidney beans and a little salsa. Thanks for the recipe, Kim! M&Mers

Easy, quick and delicious! Therefore,a keeper. Minor variations I made: I used a can of Del Monte Fiesta Corn which already had the peppers in it, and topped with a Mexican blend grated cheese, and it tasted great. Thanks!

GREAT Recipe. We made it exactly as stated, next time I will go ahead and add the entire package of taco seasoning mix. This one is a definite keeper!!! Thanks

This was very easy to make and pretty tasty. I did add a bit more taco seasoning and could probably have used the whole package and been okay. Like Sallyabreak said it think sour cream would have been a good addition. My husband added salsa to his. Thanks for the recipe.

Oh my..this was really really good! I'm on a low fat diet, so I'm always looking for something healthy. All of these ingredients have NO FAT..except the oil, and the chicken..which was lean and low in fat. I also used olive oil which even made it better for me. I did not put cheese in, but did put it on the table for those who wanted it..it was a big hit for everyone, and noone knew it was good for them!! Thank you..am passing this on to co-workers who are doing the low fat thing too..sure they will love it.
