Baked this for my niece who has many food allergies. She LOVED it! Followed directions except for the shortening. I subbed 1/2 cup applesauce since shortening has soy in it. I didn't have cake flour so I used 3 cups all purpose minus 6 tablespoons. Added 6 tablespoons of cornstarch to flour to make it fluffy (found on a substitute website). Perfect recipe for her! Thank you so much for posting this! Used chocolate icing Chocolate Icing with this.

This cake was great! I made it for my daughter's first birthday ( I didn't want to find out on her birthday that she was allergic to egg whites....) It was such a huge hit! Yes, it is a bit dense, so don't expect a "box cake" taste, but it is otherwise delicious!

dry and crumbly, tastes more like cornbread than white cake! Very disappointing.
