Hey there Ocean Ivy - I'd never made this type of cookie before, so thanks for making my first batch so yummy! A note on toasting coconut: According to Joy of Cooking, you should toast at 325 for ten minutes, but I think they meant for fresh coconut. (I used a bag of slightly stale store-bought sweetened coconut leftover from something and mine burned
So, the lesson for all the novice coconut toasters is: bake at 325 on a cookie sheet, but check every 2-3 minutes
My cookies took about 10 minutes in a 350 oven (I used convection bake).

I made these on the weekend and I must say that they were absolutely amazing! I actually put in 1 cup of macadamia nuts and I used sweetened flaked coconut as I wasn't sure because the recipe didn't say and the store only had sweetened and unsweetened coconut. The cookies tasted very decadent and rich but they were absolutely yummy! Thanks for a great recipe!

Very nice tasting cookie. My dough was a little sticky and I wish I would have added a little more flour. Maybe the humidity has something to do with it. Also I set my cookies on paper towels to cool as I didn't have a rack and the paper towels were totally grease soaked. I will try again using more flour, 1 2/3 cups to 3/4 cup butter just doesn't seem like enough.

OH MA GOODNESS!!! i am speechless as well. these are so good love the texture and flavor of these cookies. i would not change a thing i have made these with walnuts, macadamia, and pecans they are all good. just a matter of preference or what you have on hand. these cookies are very good and it is hard to eat just one

Sorry- forgot to post info last time, was in a rush. These are perhaps some of my most sought after cookies! I bring a tupperware container to work and the first questions are if its these yummy cookies! I used the coconut and white chocolate but not the nuts- way to expensive over here! Maybe I'll grab some while I'm Hawaii and try that then. I loved this recipe and shall make it again and again! Thanks so much, Ocean!

I made these as a farewell gift for my daughters teacher - absolutely beautiful. I couldn't get flaked coconut so substituted shredded coconut. Do yourself a flavour and whip up a batch of these!

Delicious. I made this for a colleague's going away party. People in the office loved them, and came back for seconds in the afternoon - unfortunately they were already gone! Will definitely make again. These buttery cookies do get very brown on the bottom and edges, so you have to watch them to ensure they don't get over done.
