I'd like to thank jackandfiona for this recipe. I've had celiac all my life, so i'm always looking for recipes that are tasty, quick, healthy, and, if possible, inexpensive. I've tried to make something similar, socca, for a long time, but it always had a somewhat bitter taste. Your addition of rice flower (I used sweet white rice flower) with garfava flour (garbanzo and fava bean flour), sweetened it up perfectly. To go with it, I made a tahini sauce, sesame seed paste, lots of lemon juice, and garlic, blended. So, again, thanks for the lovely recipe!!!
