I made half the recipe and that ended up being just one serving for breakfast - they are almost custardy creamy inside, very tasty. My banana was very ripe and I needed no additional sugar. Cooked in nonstick skillet with just a little butter - mmmmm....

Made this today for breakfast and it went over really well... I made slightly larger fritters, or had less batter, cause I got about 8 smallish fritters out of this. Did not add sugar, as the bananas were pretty ripe and sweet. I had to add quite a bit more flour to get a batter consistency. I agree with duonyte in that these are like custard inside. Very tasty, and the picky 14 mo old and the 4 year old both cleaned plates. Will make again, but double the recipe if hubby is going to be eating as well. Thanks for sharing! Served these warm with a sprinkle of powdered sugar.
