And an incredible version it is! I have seen the Good Eats show where AB made it and have been wanting to try it ever since. Today was the day. The technique is great ...although it will take me a bit to get the timing exactly right, with the bread nicely toasted but not too brown. I used one cast iron skillet and the smooth side of a cast iron grill. I'll be making this again.

Yummy! I put it in my George Foreman grill to toast it instead of fooling with the heavy skillets though, for the same effect!
