This is a wet curry, rather like a thick stew. I made it with beef and so went with the red curry paste. I did make two changes. I added a clove of minced garlic and I browned the beef first in a very little bit of olive oil before adding to the crockpot. DH and I both enjoyed this recipe, but I wouldn't recommend this if you have very young kids (unless they like spicier cooking - mine don't - even though I do try to get them to 'taste' everything I make.)

Really REALLY good. I've made it a few times, and the pot is always empty by the end of the day. Just be careful you don't add too much fish sauce - I did one time, and the whole kitchen smelled (and it overpowered the curry).

I did the chicken version and used 3 TBS of green curry paste. MMMM! This was great! I served over white rice.

DH and I LOVED this recipe...I used 2 Tbsp of the green curry paste and it was still quite spicy (the kids would not like it - more for us!) I used whole chicken breasts that were frozen bcs I was worried about the bird being powdery after cooking for so long. Our Crockpot has 4,6,8 or 10 hr options, I chose the 4hr one. Any longer and the chicken would have been overdone. Served it over Jasmine rice. Next time I will try cutting the chicken into large chunks and quickly browning it first to seal in the juices. I would not change anything else, it's delicious!

Loved the potatoes! Really easy and I love it that you can put it all in the crock pot and forget about it! Thanks Kimke!

Easy. I loved the potatoes, but it was all pretty mild/bland. My husband liked it, my girls didn't really care for it. (they're picky, though) I may try it again in the future, with some tweaking.
