This is a fine recipe! I only made two small additions to it. I added a pound of sliced fresh button mushrooms (I needed to use them) and 1/2 teaspoon of crushed red chili flakes.(I do like my chilies.) I also left out the noodles. By freezing it plain, I can cook some noodles as the soup thaws, voils, turkey noodle soup. If I add cooked rice instead of noodles, I have turkey rice soup. I can always use the soup as the liquid ingredients for any number of casseroles. This is the style of preparation that OAMC is all about. Thanx for posting this great recipe. Pierre

I had never made a recipe using a turkey carcass and this year I thought I'd give it a try as I was comtemplating what to do with what little was left of our 20 lb turkey. There wasn't a lot of meat left on the bones, so I decided to also throw in some of the leftover turkey. In addition, I added some of the stuffing and leftover veggies and substituted medium egg noodles for fine. After I started the soup, I decided that warm, homemade bread from my bread machine would be the perfect accompaniment. Since that would take 3+ hours, I just had the soup simmer longer while I made the bread. Other than having to add more water, it didn't matter - the soup came out wonderful. It was easy to make and gave me several more [almost] free meals/snacks. I don't think I'll throw out another poultry carcass again. Thanks for this keeper Frank.

Frank, thank you for a great recipe. I had a bunch of turkey left over from Christmas dinner and your soup offered the perfect solution! I didn't have the carcass anymore, just the meat, but the soup turned out to be fantastic anyway. Thanks again!

What a great soup! The best turkey soup I've ever gorged on! I had already cooked my carcass the night before and had gotten all the meat off. I was just looking when I came across this one. The only thing i did that was a little different was that I started out with fresh water. I added 2 cups of noodles instead of 4 and diced 2 large potaoes and added with the veggies. I really liked the convience of this recipe, using frozen veggies already cut. This is deffinately a keeper! thanks Frank!

Simply fantastic!!! I made it today and used many of the suggestions made by other reviewers - adding garlic, using chicken stock instead of water, added corn as well. I made the noodles on the side and added them in - great suggestion - makes the soup more versatile. I omitted the making of the roux as I did not think it was needed based on the other reviews. I am going to make this using rotisserie chicken from the store - dice up the skin and all. Thanks Frank!!!!!

This soup has the best flavor, I have to admit that I added one can of diced tomato and one can 8oz of tomato sauce...yummy

This recipe is easy, economical, and excellent. I enjoyed preparing the soup and I had many curious inquiries in the kitchen where I work as to what I was heating up for my lunch. Yummy!

Great recipe! I only had one whole turkey leg left but I was able to halve the recipe very successfully. With the one leg, I used a little less than half the water, bouillon cubes and salt, but for the rest of the ingredients, I used a little more than half the amounts called for. Didn't have parsley or green beans, but did add one chopped parsnip at the same time as the carrots etc. Used broad "dumpling" egg noodles as that's what I had on hand. Thank you for such an easy, flavorful, and economical recipe!

Very nice! I used leftover turkey carcass from Thanksgiving and added leftover mixed vegs., using wide egg noodles. Thanks for a hearty, yummy soup!
