DD was making zucchini bread so she told her brother she'd make muffins. That way he could have them before school in the mornings. This made 24 regular sized muffins for us. They are light and moist and best of all YUMMY. Made for Zaar Cookbooks Tag 2008 game

So good! These bake up nice and high and round, just perfect. I never bake with oil as it is tasteless and adds nothing to baked goods. I used margarine as I had lots of it in my fridge. I doubled the cinnamon and choc. chips, no nuts. Excellent! thankyou for posting Jillster.

I did customize this recipe slightly, using 1/2 cup white sugar & 1/4 cup brown sugar, and I used mini chocolate chips. Excellent! I'm adding this recipe to my collection!!!

WONDERFUL!!! used up more of my zucchini!! didn't change a thing except to add a whole bag of milk chocolate chips instead of just a 1/4 or 1/2 a cup (but will probably only do about 1/2 or 3/4 of the bag next time!!), omitted walnuts, and added a TBSP of instant coffee granules. thanks bunches Jillster!!
