Yummy. I didn't have evaporated milk so I used cream and I sub'd 1/2 cayenne pepper for hot sauce. You definitely need to use the sharp cheddar — mild cheddar doesn't have enough oomf to flavor the pasta. PS. Very creamy and cheesy! My son had seconds, I was thrilled, he is not generally a mac'n'cheese fan! I didn't add the hot sauce, tho I think DH and I would have enjoyed it, but I was quite generous with the mustard. Extremely easy to prepare, super for nights when you don't have time to cook! This was not a crowd pleaser. Too much mustard, in my opinion. Not bad, just not to our tastes. I do appreciate the easy stovetop method and may try this again with modified seasonings. Thanks for posting.

Excellent. Don't be afraid of the hot sauce, it's not enough to overpower the dish. Reheats well, too.

Delicious and easy! For a quick homemade mac - this does the trick. Not better than a baked, sliceable, creamy, thick-enough-to-stand-your-fork-up in mac n chz (I love the recipe on cookingforengineers.com sans topping.) I omit the hot sauce and cut way back on the dry mustard, and I add the butter, melted, directly to the egg mix.

This makes a great mac-n-cheese! It's simple, delicious and creamy. What more could you ask for?! And, to top it off, I always have these ingredients in the house!

We LOVE this recipe in our house. While we still revert to the box stuff, it is usually for the kids. Whenever the mood strikes me or my hubby for mac & cheese this is what I whip up.

Yum, yum, yum, yum, yum! I wanted to make DH and I hearty dinner before Halloween festivities began and decided mac and cheese would make a great fall dinner. So glad I chose this Alton recipe- easy, quick, a lot tastier than I ever expected! I like homemade mac and cheese but DH prefers the blue box- except this time. We both agreed this recipe will be our standard. Thanks for posting!

I made this the other night and it was of course fantastic. I used the original amount of mustard from Alton Brown's site and found it delicious. I also through in a handful of shredded gruyere. Perfection! I see Karen Elizabeth made it with Penne, so I will be trying that next time! Thanks for submitting!
