This simple dish is such a big part of my life. My brother and I always looked forward to this meal when I was little, and my own children now get cravings for "Lola's corned beef". It's a quick, inexpensive meal that defines the phrase "comfort food". Thanks so much for posting and bringing back some wonderful memories

I make this without the tomatoes, just because my mother never added that when we were kids. I also boil the cubed potatoes for a bit before adding it to the pan; I feel that they never cook up enough when I try to saute them first.
