i was looking for a healthy but tasty cookie for my picky 16 mo old daughter. these were perfect. i used all organic ingredients and substituted whole wheat flour...omitted nuts and rasins for her but they were still very good. not too sweet but not bland. a very simple, fresh taste. great recipe.

These are absolutely divine! If you like Oatmeal cookies, you'll love these!!! DH doesn't really care for cooked raisins, so I left them out, but I think as well as he liked these, I'll give a few raisins a go too next time. I couldn't believe how fast these went. Within minutes after the first batch came out of the oven they were gone. They turned out soft and chewy. I used Granny Smith apples, my favorite for baking and the cookies weren't too sweet, nor the apples too tart. I thought everyone would have had their fill and I'd have some for DH's lunch tomorrow. NOT!!! Thanks for sharing a really great and healthy recipe Karen!

Mmmm, these are so delicious!
I used olive oil instead of shortening. Everything else is exactly as the recipe calls for. I made them for my boyfriend's family as a thank you. I don't want to give them away! Thanks, Karen.

Delicious! I have made these cookies several times in the past few months (the first time on my first date with my boyfriend, who loved them!). I also didn't use raisins, and the apples added a wonderful texture and flavor. A great way to use the leftover apples no one wants to eat, but are still good for cooking with. Thanks for a great, yummy recipe.

These cookies were wonderful!!! We have always enjoyed a cakey cookie at our house and these cookies fit that bill to a TEE. The flavors blended just right to give this cookie excellent taste. I am very glad we doubled the recipe the first time or I am sure we would be mixing up another batch again. Thanks for sharing a super recipe!

This was my very first successful oatmeal cookie! (and that says something, I've been trying to make them for 10 yrs!) They were so chewy and yummy. I got 36 medium cookies on the nose out of it. I had one cookie come out with no apple in it, it was just as good. Thx for the great recipe Karen, this is the only oatmeal cookie recipe I'm ever gonna use!

I wanted a soft, moist oatmeal cookie and this recipe was just what I was looking for. I made a few revisions, though, because I made these on a whim and didn't have all the ingredients. I left out the raisins, nutmeg and nuts; I also had no apple but did have unsweetened applesauce, so I added about 3/4 cup. Then I decreased the shortening to about 1/2 cup. I'll be sure to try them in the future as written, but they still turned out soft and flavorful with the revisions. They reminded me a little of apple flavored oatmeal. Loved them!

The family just loved these cookies .I made them with raisins and walnuts in them. They went fast. Had to adjust my oven temp because first batch come out a little dark. Otherwise very good recipe.

These were different and delicious. I don't care for raisins so substituted w/dried apricots. Turned out great!

10 Stars..I tried this recipe to avoid wasting some extra apples. What a wonderful surprise. These are GREAT! What a nice change from chocolate chip cookies. I exchanged the flour with whole grain flour which gave them a light but hearty texture. These did not last 24 hours. Next time I will add more diced apples and walnuts. Thanks!
