As is so often the case, I was initially drawn to this recipe by the photographs, really liked the sound of it on reading it through -and just LOVED the finished dish. I used fresh breadcrumbs, processed and seasoned with rosemary, sage and thyme, and we enjoyed it with **Mandy**'s Baked Garlic Mushrooms. I didn't weigh the parsley and undoubtedly used proportionally more, and I added probably a cupful of chopped baby spinach leaves. And I just couldn't help a tendency to always want to double the garlic, but otherwise followed the recipe exactly. An excellent example of just how delicious a simple recipe made with top quality ingredients can be. Thanks for sharing another super recipe, Noo! I'll certainly be making this again - and I'm thinking that next time maybe I'll add some pinenuts.

This has a lot more flavor than I thought it would! It's delicious. It makes such a nice and light side dish or even a main dish! I really enjoyed the addition of the fresh and buttery breadcrumbs to this dish. They are really yummy and I might increase those next time! Thanks for sharing such a wonderful recipe! I think this is even better the next day! I had the leftovers for lunch and it was delicious!

I found this recipe earlier this morning, and I couldn't wait for supper time to get here to have it!! It truly lived up to my expectation of it! It is soooo simple, and light for a hot summer evening. I made the recipe as posted, and next time, YES there will be a next time, I will add some red pepper flakes for a little kick. But all in all a great easy recipe that will be made over and over in my house. Thanks for posting this recipe.

I can't believe I forgot to add this one! This recipe made it into our Favorite Finds of 2008. 10/20/08 - Wow is this a great pasta dish! And because this dish is sooooo good, we did some research and found that it's traditionally a pasta dish served with a spicy tomato sauce, though there are also unusual variations on the theme and this is one of them,.. and a fantastic one at that! You are correct Noo, the recipe does take its name from the hand-drawn or mule-drawn "Carretti" (carts) that were used for bringing the wine and olive oil into Rome from the surrounding hills. This recipe is very unique indeed and gives it a wonderful buttery, crunchy texture to the spaghetti. We made as directed using regular spaghetti and also butter (and lots of it) along with the olive oil. We served it with Good Eats Chicken Kiev (From Alton Brown 2004) and they complimented each other quite well being different types of breadcrumbs (the kiev' using panko). For this recipe, we did use seasoned breadcrumbs as that is all we buy. Thanks Noo, we will be making this VERY often.

Yep! This is truly an outstanding dish. I used angel hair pasta. I also cut the recipe down to serve only one but used it as a side dish. There was so much of this that we had plenty on our plates. Next time I plan to increase the amount of crumbs to butter ratio because mine were on the soggy side. Thanks for posting.

I am in complete agreement with all previous reviewers as I anticipated preparing this recipe to combat the flourish of activity this afternoon. Just returning home after having walked the back "40" of the farm, inspecting our fences, checking on cattle grazing off on the yonder hill, and pulling the last of the sweet potatoes from the garden...we were all hungry! How perfect to prepare this dish, especially with the use of commonly found ingredients right in your icebox and pantry. We devoured this meal, and in particular the breadcrumb and fresh parsley coupled with onion, garlic, and oregano just had bursts of flavor that had you begging for more. I didn't change anything except I used whole wheat pasta. Thank you so much, Noo! Made for Please Review My Recipe Fall 2008

I don't know why I thought would be good because I have never heard of pasta with breadcrumbs. Well, I'm glad that I followed my instincts, because it is absolutely DELICIOUS!!! Very quick to put together, tons of flavour and a perfect portion size for a meal. I will make this again for sure. The one and only change I made was that I used regular spaghetti. Made for TYM tag. Thanks Noo!

I've been making this for years. Not sure where I got the recipe but it is super simple to throw together for lunch or a late dinner. The flavors speak for themselves. Great to see that others enjoy it as well.

I hate to be the dissenting opinion, but neither my son nor myself thought this was good. We had it as a side dish, cutting the recipe in half. I'm so sorry for the review, but feel I have to honest. I had high hopes for the recipe...so simple, and many good reviews. But it is not something I would make again. Made for Zaar Stars.
