I did add a finely minced green onion and used mixed Italian herbs as I was out of oregano. Quick to get to the table!

These were very nice. I salted the cucumbers a little before adding the filling and they were pretty tasty. Very pretty on the plate. Made for ZWT 4.

What a nice and easy substitute for salad...cucumber boats instead! I used English Cucumbers (my favorite, unpeeled) and added green onions as suggested by Julie B's Hive. I also used the Italian herbs as Julie suggested, and threw in some rosemary. This was a great, cool, easy summer change. Thanks for posting!

These made a nice quick side. The recipe was reduced to 2 servings and an English cucumber was used. The only thing I might add next time would be some finely minced onion. Made for ZWT 2008

A very nice, light & refreshing treat for a hot day. Very easy to throw together and looks so pretty on a plate. Next time I'll kick it up a notch and add minced jalapeno and lime juice. Thanks for sharing - I will be making this frequently. Made for ZWT4

These cucumber boats were delicious and so pretty! Our family had some guests over today and the boats were a hit! Even my younest and picky DD loved eating her "boat." She wants me to make them again soon because they're fun to eat! :D I was adventurous and used Mock Feta Cheese ( Vegan Substitute ) in place of the feta, but it really tasted fantastic. My family will be making this again! Thanks! Made for ZWT 4.

These were so cute! I made these for ZWT and couldn't find feta cheese where I was staying on vacation, so I substituted regular chedder. Would have been better with feta, but cheddar did the trick too! I used a white balsamic vinegar for this, and didn't bother to chill (as I had no refrigerator).
