I made these this morning and both my girls gobbled them up. They both ate 2 huge waffles. I will definately be making these again. Thanks for the recipe.

Oh. My. Goodness! These are fantastic! Mine weren't exactly low-fat, since I used up some whole milk that was taking up space in my fridge —
— but the result was wonderful nonetheless. The size of my waffle iron allowed me to get 13 gorgeous waffles out of the batch, and it was a good thing there were so many — they were so tasty, I ended up eating two right away, and my fiance polished off three in one sitting!
The rest are going into my freezer for quick breakfasts later on. I served these topped with Cracker Barrel Fried Apples #106262. Thanks for sharing a recipe I know I will make again!

Great texture and consistency. Didn't have fresh ginger, barely sprinkled powdered ginger in (it's recommended not to do that in other recipes because of taste differences). Has a very strong clove smell when cooking, but is not overpowering when eating. Haven't finished making entire batter yet, but guestimate 18-20 waffles in my little waffle iron (it makes 2 4X4 inch waffles at a time). Mine made 14 waffles and 8 pancakes. I got tired of standing over the waffle iron.
Good recipe! Will freeze uneaten portion to toast later.
