Really very tasty. I made it exactly as directed except for one change. I used 4 oz. of crumbled goat cheese instead of the mozzarella. I did not serve it over a mixed green salad, because it stands on its own. I will definitely be making this again! Made for PAC Spring 2008.

Excellent! Absolutely gorgeous, and very tasty, not to mention healthy! I used half the amount of cheese and it was plenty. (I was out of "good" mozzarella, so I cut up two cheese sticks. Don't tell my kids!!) I was also out of cucumber, which would definitely add a nice cool flavor next time. I added some diced roasted red bell pepper, too. This was the perfect lunch. Thanks, I'll make this again and again!

Loved it! I didn't have quite enough cucumber so I added sweet bell pepper and olives. Also, I halved the recipe and served it as a side salad, using shredded mozzarella rather than cubed. Delicious! Thanks Brooke! Made for Zaar Stars, please see my rating system as I rate tougher than most.

very good although it needed a few amount adjustments and fresh ground black pepper, I used green onions in place of the sweet onion as I have a huge crop in my garden, thanks for sharing Brooke!

I really loved the flavor of the beans and veggies! The only change I will make next time is to add the mozarella just before serving. When the cheese soaked in the vinegar for an hour in the fridge it came out tasting....... not like mozarella. Other than that, delish! Thanks for a light lunch recipe!

amazing!! i simply love chickpeas and they taste great with the tomatoes and cucumbers. i usually have a salad with chickpeas, tomatoes, and cucumbers, but the basil and garlic take this up to the next level! made for zwt4

this was very good - i left out the onion and parsley, because i didn't have it - and ate it with some romaine lettuce, later this week, i'm sure i'll use it as a pita filling too

Delicious and a perfect 'beat the heat' main-dish type of salad. I used feta instead of the mozz and mint instead of the parsley. Loved the combo. Ate with pita bread.
