I haven't tried this yet, but can't wait to! Thanks for posting a great variation! Made the original version yesterday (although I lightened that one up as well.) The Laughing Cow cheese is an excellent idea! I used fat free cream cheese when I made the others, but I bet the LC cheese would be even better.

This was awesome. It would be great to take to a pot luck breakfast, which we have at work every now and then. My teenagers inhaled them. I had none left to freeze. They both suggested adding sausage crumbles to the mixture instead of bacon.

I was unable to find reduced fat buttermilk biscuits, so I used the regular jumbo ones. (I would think the whole wheat biscuits might be good too--may try that next time!) I used all the other ingredients with the exception of the Laughing Cow cheese. I was cooking a bunch of other stuff the same day, and must have gotten confused (DUH), because I used plain reduced-fat shredded cheddar instead. It was just fine that way, but next time I want to try to LC cheese. These are great for the freezer, take one out, warm it and you have a nice little breakfast. Thanks for a keeper of a recipe!
