Thank you for a lovely recipe. I also fed it to 'non-cauliflower' people and it was pronounced a great success! I substituted low fat evaporated milk instead of the double cream and I used a spray of olive oil instead of the butter. This took the fat and cholesterol down substantially and I honestly believe the taste is not affected. Why don't you try my similar Curried Broccoli Soup Curried Broccoli and Leek Soup. Awesome cauliflower soup! I made this as written. I had a big head of cauliflower. I think if using a small cauliflower, the stock amount she be a little less. It may seem that the nutmeg and paprika amounts are a bit much, but it really works without being overpowering. Great soup that I'll make again. Thanx!

This is delicious without any cream, and even better with.
I added a diced leek with the onions and used my stick blender to puree--I was not opposed to having some texture, but it turned out perfectly smooth. I love the nutmeg and paprika flavorings.
