Anything that is potato is good! I do mine a little differntly so I hope you don't mind that I share. I cook the potatoes in the microwave first then I squash them. I pan fry them in olive oil and top with shredded cheddar, bacon bits and green onion. Lovely recipe!!

    We loved these potatoes. They are crispy on the outside with tender potato inside. The directions are well written and easy to follow. This was served with steam vegetables and Simple and Healthy Poached Salmon for a delicious meal. Made for PAC Spring 2008.

    These are fantastic! I have to admit I cheated, I nuked the spuds instead of baking them cuz I was in a hurry, but I don't think it did them any harm. Followed instructions after that. Served with sour cream, cheddar cheese, green onions and bacon bits. Wonderful! Easy! Thank you!

    What a great idea! DH says it's like eating a french fry stuffed with mashed potatoes. It is the first time in over a year that he has eaten a whole potato!! The only thing I did different was to use Canola oil because I am not fussy about the taste of Olive oil. Thank you for a new twist on a tired vegetable - you have given it new hope. A keeper for sure.

    YUM FUN! I can see this recipe hitting 1000 reviews in no time! I used Dipping Oil - Rosemary Garlic And then topped with salt I found in France that was truffle infused! I just took this so simply made dish and made it so exquisite. I so wish I lived in France! But America isn`t so bad! Ay, neither is Canada! Thanks for this fun recipe!

    I wouldn't know what there would be to not like about this recipe. It is really easy to do and puts a new twist on the classic baked potato. I had some red skin potatoes that I bought on sale last week that needed to be used up. So, I used those but that was the only change I made. I like that it would encourage people to eat the skins of the spuds which are so good for them. I also like that you could use these like baked potatoes and use sour cream and the like or you can use them a bit like roast potatoes for a roast or something. I served them alongside some pork chops with a mushroom onion gravy and they were great with a bit of the gravy over them. Made for PAC Fall 2008.

    MMmmmmm this is sooo easy and fun to do! DH says it looks like somebody sat on it. lol I hastened the cooking process by microwaving it for 7 mins cutting out 55mins of baking (great isn't it? :D ), then squashed it and poured oil with salt on it. Waited for it to bake in the oven for 12mins/each side and voila!So tasty!Slight salty crunchy outer skin that's soft inside. Fabulous! Made for WZT4's family picks.

    These were really good potatoes. Very simple and tasty. They were, as others have already said, very soft on the inside and crunchy on the outside. Thanks for sharing Dreamer.

    Made for the PRMR game, this is a tasty & unique quick-fix. I made the recipe 2X ~ 1st as a trial on Fri nite ahead of dinner guests on Sat & then again Sat nite. We really liked them Fri nite, but felt they would benefit from a boost of flavor. For us, that was garlic, so the 2nd batch was brushed w/garlic-infused olive oil to create the Wow Factor we were after. I esp like that these will always be a good potato side-dish to nearly every entree I might serve & do not require all the high-calorie add-ons typical of baked potatoes. Thx for shraing this recipe w/us.

    Ha! these were so fun. It's like your destroying the potato, but only to make it better! We have to serve these next time we have guests over. The crunchy/creamy texture is wonderful. We used red potatoes and had em with a little dollop of sour cream. Yummy!
