This was a relly good recipe. Thanks so much for sharing this. My husband is out of town working and I prepared this and ate half of it with my kids and put the other half in the freezer for a latter meal. I used Creamy Herb Mashed Potatoes for the mashed potatoes. What an easy one meal dish. Prepared for PAC Fall/2008.

A little time consuming to make, but the flavor is GREAT, and to have this kind of home cooked meal on a spur of the moment by pulling it out of the freezer, well, the time and effort were worth it! Thanks for posting!

I made this last night for dinner and to save two pans for during the month, and I really enjoyed it! I did make some changes due to what I had on hand, and it still turned out great! I used canned carrots, and instead of cooking them with the onions, I just poured them in with the corn. I also replaced one cup of the beef broth with one cup of port wine for even more flavor. The oregano, I just added a small pinch since it's not my favorite, and I used http://www.recipezaar.com/294395 for the mashed potato topping. I froze two of the pans, and cooked one, and it turned out absolutely delish! Thank you for a great recipe!
