This is a fantastic base recipe for jerk chicken. I made a few modifications. 1. I use a jalapeno pepper and a scotch bonnet pepper (we like it hot). 2. I double the thyme, cloves, nutmeg and garlic. 3. I triple the allspice. 4. I cut the oil in half. 4. I reserve 1/2 the marinade for basting and baste and flip the chicken about four times, cooking a total of 15 minutes on the grill.

While a little on the 'moderate' side as far a prep goes, this was still an excellent recipe! I only have a little 3 cup food processor so I did all the dry ingredients first and then added the liquid stuff. It ended up overflowing a bit before I dumped it into a bowl, but at least everything was chopped and mixed enough to use.
I let this marinate about 6-7 hours and it was great! Next time I might add a little more jalapeno for more kick (didn't have any), but it was still very tasty as written and even my 4 year old could eat it. It had kind of a sweet taste that was wonderful with the chicken. Thanks for this one! It's a keeper!

I'll admit I was sceptical about the list of ingredients, but I'm so glad I tried this recipe. It is fabulous. My husband couldn't get enough of it. I left out the onion and cut back on the soy sauce. The jalapeno adds a perfect kick to the marinade. Thank you for posting...it's definitely a keeper.
