After reading previous reviews, I doubled this recipe the first time I made it, and was really glad I did. Delicious! I used basmati rice, regular fat coconut milk, and, according to what was in the pantry, a little less ginger, no green onions or flaked coconut. Still delicious! Thanks, Sueie.

This is extremely smooth and creamy - almost reminds me of risotto in texture. I used short-grain rice and a 1:1 mix of water and broth, instead of 2 cups of broth. Makes a good side dish or a lunch with some fruit.

This rice was just right - fantastic flavor but mild enough not to overpower the main dish. I made one addition which took the rice to another level - toasted sliced almonds stirred in just before serving. I also omitted the flaked coconut. Thanks for a great recipe Sueie - we'll be making it often!

Something a little different, but very tasty. Liked the creaminess of the rice, and the hint of ginger. I served this with a tomato chicken dish I make. Thanks for posting. =)

My 12 year old said "Awesome!" and we all agree. I think it was great (I usesd powdered ginger) and I served it with Thai-style roast chicken Thai-style Roast Chicken. Thanks for a delicious rice dish!

Seved it with Chicken Satays in Peanut sauce-great combo! The rice is easy to make, and is a delicious alternative to plain rice!

This was made with the 2 cups broth, 1/2 cup low-fat milk mixed with 1/4 teaspoon coconut extract and the remaining ingredients as listed. It had a nice, subtle coconut flavor. The rice was white basmati.

I love this recipe. It uses less coconut milk than others so not as much fat content, but still all the flavor.

I loved the fragrant bouquet of this dish and the taste was light and just right. I used Basmati rice. According to the others at the table, don't use too much lemon rind though.
