I loved this recipe. Here is how I prepared it in an 8 inch nonstick skillet... Warm skillet over medium heat and then coat well with a tbsp of butter. Pour in 1 beaten egg and swirl egg around to coat pan. Sprinkle half of the ham and onions over. When egg is set... (about 2 minutes) then fold it in half. Add the other beaten eggs to the empty side of the pan and sprinkle remaining onion and ham on top of that. Let that cook for another 2 minutes and then fold on top of the other. Please cook on low(ish) heat. High heat makes egg whites tough and rubbery.. I loved this.

    I followed Potsie's directions for cooking in a nonstick skillet. Turned out beautifully and had a nice flavor. Love the addition of the soy sauce!
