38 Reviews of 30 Minute Chicken Noodle Soup (From Foodtv, Rachael Ray)

From: Stephanie in Pittsburgh

On Feb 27, 2004

I just love 30 Minute Meals with Rachael Ray even though in my kitchen it's 60 minute meals (to quote my mother). Sauteing all the vegetables before adding the stock made them so sweet and tasty! I used a tablespoon of dried dill which I added with the noodles rather than the fresh.

Assuming you followed Rachel Ray's recipie exactly, this is WONDERFUL! So easy and tastes like it took all day! Freezes well. Highly recommended. Use the parsnip even if you normally wouldn't. All the flavors meld so well. (1/3/2004 Okay, I forgot what a parsnip looked like and used a turnip. Still good!)

This recipe was very good and extremely easy to make. Using the chicken tenders makes all the difference. I followed the recipe exactly as stated. The only problem was that even after adding more broth, there still wasn't enough for the four of us to have seconds. Next time I will definately make a double batch. Very nice flavor.

This soup turned out great! We were sick with colds, so I just used vegetables I had on hand which happened to be a bag of frozen mixed vegies. Carrots, potatoes, peas mix...I know it's probably not the same, but I sauteed them with the onions and I added a chopped bell pepper, just like it instructed for the other vegies. They turned out great in the soup and it made it even faster, because I only had to chop the onion and pepper. It really tasted like it had been cooked all day. Delicious, thanks for posting it, this will be my new chicken soup...with my cheating mixed vegies of course.

Rachel Ray strikes again! I don't get to watch her show as much as I would like and I didn't catch it the day she made this. We all had colds and I was looking for a good Chicken Soup to soothe the soul. This definately did the trick! This soup is EXCELLENT! It's quick, easy, tastes homemade, has a wonderful combination of flavors and fills the house with pleasant aromas. The only thing I will do differently next time is DOUBLE the recipe. This will be made again and again in our house. Thanks for a keeper Terry!

What a great, quick soup! A few alterations didn't lessen how good it was: no parsnip, canned chicken breast, dried dill and orzo pasta instead of egg noodles. A big hit at our house that took about 40 minutes to prepare (how does she DO that in 1/2 hr>?!?!?!?!) and definitely a recipe to be repeated....

Yep, follow the recipe to the T, and this is the best chicken noodle soup I've ever had.

I made this today with some little additions and was very happy with how it turned out. It was very simple and easy to make too. I added a large clove of garlic, ommitted the dill and added a little dried thyme, dried basil, and garam masala which gives it a nice warm taste. I also used tinkyada brand gluten free noodles because I don't eat gluten and it worked great! Thanks for posting it!

This was a VERY tasty soup that my whole family loved and also the first time I've ever cooked with a parsnip! My only complaint was the amount of fresh dill it called for. I doubled this recipe but only used the amount of fresh dill called for in a single batch and I still felt it was quite strong. I will definitely make this soup again and I will double it, but I will only use enough dill for a 1/2 batch of this soup (or 1/8 cup). I really liked the dill in it, so I won't omit..but it was just a bit much. I also added some minced fresh garlic to this while sautee'ing the veggies. I bought a whole rotisserie chicken and used it all for this recipe. The meat tasted wonderful! I did not add the pasta to the soup as I don't like how starchy soup gets when you do this so I added it to each bowl and froze enough for 3 future meals for my family. Finally, I added a few dashes of oregano and basil to this since I love it in my usual chicken soup recipe. Really great and will definitely make this one again!
