I tried this today for lunch and it was really delicious! This was really quite different tasting - I loved the warm pineapple in this dish. I used shrimp for my cooked meat and left out the eggs and raisins (I used extra pineapple instead). I am delighted that with this recipe I was able to turn my leftovers not only into a tasty lunch treat, but also a meal fit for company. Thank you for a really great recipe!

Nice & Easy. A good way to use left over rice. this recipe made a good lunch for my husband and I. It's easy to customize.

I had leftover rice, chicken, pineapple,and peas in my fridge, so this recipe seemed perfect. I used 1 tbsp. yellow onion, and no garnish - didn't have any nuts. Peas was my only vegetable. This is the best fried rice I have ever had! The ingredients blended together so well for a wonderful dining experience. Thank-you for a fabulous recipe to add to my collection.

I quite liked this dish. I used frozen corn, peas and sauteed mushrooms as my vegetables. I also used leftover canned pineapple. Next time I would probably add diced red pepper for colour.I found that this was very to prepare and will definitely make this again. Thanks for the recipe.

Very good. Next time I will not use as much white pepper. It was too much for our taste.

Very yummy and QUICK. Since I had leftover roasted chicken this literally took me 15 minutes to prepare. I left out the sugar and raisins. We had very sweet pineapple. I also didn't have any white pepper so I used black. I added some peas and used peanuts instead of cashews. My son loved this dish and it was perfect for our busy schedule. Very fast to prepare. We used this as a main dish so I added more chicken and rice than the recipe called for. It was a wondeful entree. I highly suggest this recipe to use up those leftovers.

Yeah, a side dish all the kids ate! Lightly sweet, went well with teriyaki chicken. Didn't use cashews or chicken (as it was a side dish for chicken). I added the eggs and corn. Different taste, but a nice change.

I just HAD to try the recipe for microwave rice that I saw on this site yesterday, so today I had a whole lotta leftover rice! (That recipe was great, by the way. I will probably not cook rice on the stovetop again.) But today, looking at all that rice in the fridge got me back to this site, where I ran into your recipe. It perfectly hit the spot! Thanks for posting it. I needed a memory jog about the pineapple & it added so much to the dish. Yum!

What a great fried rice variation! The flavor was fantastic. I used green beans, scallions and mushrooms and omitted the chicken b/c that was the dinner entree. I forgot to add the cashews and I used more pineapple instead of the raisins. I will definitely make this one again. Great use for leftover rice and/or cleaning out the fridge. Thanks for sharing!
