Yours is a little fancier with the toppings than my Dad ever made, but we used to have this on winter mornings before going out to cut wood. The memory tastes so good, ... maybe I'll make it for my family this weekend if I can find some potatoes that my teenage DD hasn't baked in the microwave for a snack yet.

I know in a dish like this you are not really sopose to care about "health" foods..... but of course I did. I used turkey bacon and egg whites with food coloring to make them look more real. Also I drained all of the turkey bacon grease and used pam as the oil to make this a bit more figure friendly as well. But this was such a warm and comforting dish even with those changes! I loved the versatility of this dish. I used the left over few scraps of cheese I grated in the fridge, left over potatoes, and threw in some green beans I had laying around too. I am sure that any other sort of leftover meat or veggie would go great in here as well. Thank you for supplying me with an excellent quick and easy dinner for me after a long day of classes and exams!

This is just delicious and simple to make with outstanding results. I made this for brunch and my family loved it. This makes a very filling meal and I will definitely make it again. Thanks for sharing, Andi!

Delish!! To me, the potatoes were what made this egg dish stand out. I made this for an inexpensive dinner and it was received well by all! My daughter asked when I'd make these again. Thanks, Andi, for posting a yummy dish that you could serve for breakfast, lunch or dinner!

Andi thank you for a wonderful supper! I used a can of new potatoes that I sliced and fried in the onions. Had turkey bacon on hand and didnt have much bacon grease so I added some butter to fry everything. For this to taste over the top, definitely use real bacon. We arent real spicy/hot eaters so I omitted the tobasco sauce but did add the cheese and tomato. Also sprinkled some bacon bits on top before serving. Very easy to get a great meal on the table for supper! Thank you hon, will definitely making this again.

Pls refer to my prior review of SQ Ferris Wheel Chicken Salad. I felt your recipe deserved an equally dedicated effort as written. I had just finished feeding our cats & they were content. Siggi walked into the comp rm, said he was near starvation & asked What does a guy have to do to get some food around here ? I had already hung up the laundry, so I went to the closest farm for supplies & then a hothouse for a tomato. When home again, I went right to my kitchen & quick as a wink put this plate of goodness brunch together for us. I told him at the table about our tag exchange early today & said his breakfast was part of the joke we shared. A little later, he snuck up on me to say Dennis and I eat pretty good . Feel free to make more joke picks like that one . Thx for sharing this recipe w/us, but I do not think I am the farm girl type. Too much to do on a farm & I need my nap now.

This was so good and simple. I used egg beaters and canned potatoes. But what really made this stand out for us was that I used 2 slices of Virginia cured country ham instead of bacon because the recipe was just calling for it, and I had some to use up. Yummy Yummy in our tummies. We had this for breakfast, but will fix again for dinner soon, I'm sure.... Thanks Andi for such a great simple, filling and flavorful meal.

A wonderful oh so terrific breakfast. Especially as I look at the nasty white snow coming down at the end of march. Comforting, easy and delish.
