I have to rate these 5 stars based on my kids, 6 and 2 tastes. They love these and can't get enough. I used a Bisquick type pancake mix so I did add an egg to the recipe and I made the beet puree with canned beets for ease. I now make a triple batch when I make them because my kids beg for them for breakfast and snacks but still just used the 1 egg when I triple the recipe. The color was perfect for Valentine's Day.

I'm not a huge fan of pancake mix but these turned out well! I used canned beets b/c the price of fresh was ghastly. My DH loved them, and my DD (who doesn't ever eat pancakes) wolfed them down. I myself thought they were ok - but then again I smelled like beets after pureeing them, so maybe it was just me! LOL!

I thought the flavor on these was really good, almost like an apple cinnamon muffin. I used TJ's multigrain pancake mix and added an egg for good measure. My only problem with the pancakes is that no matter how well the nonstick pan was greased, the pancakes stuck and were difficult to flip. Not ones I would make for company.
