I've made this twice, and I have gotten rave reviews both times! The flavor is delicious and unique. It is much more complex than the typical southwest chicken casserole. The tortilla chips absorb the liquid and transform into a layer of "masa." The only reason I haven't made it more often is that it was a little labor and/or time intensive. It has many steps, but I promise it's worth it!

I didn't make this myself, my son made it. I loved it and will be making it myself. Really great technique for cooking the chicken.

This casserole is awesome! If I could give it 10 stars, I would. The preparation is a lot of work but the end result is so worth it. My husband is looking forward to having some of the leftovers to take to work for lunch. I didn't use Emeril's Southwest Seasoning as I had on hand a commercially-prepared southwest seasoning blend. The spices were almost similar so I don't think it altered the taste too much. I will definitely make this dish again!

Oh, my...this was probably the most complicated casserole I have ever made...but it was so good! There's such a great mix of flavors and textures. I used the recipe for Emeril's Southwest Seasoning, but didn't have coriander, so just used extra cumin.

Wonderful, wonderful flavours in this casserole! I wish I had more, I would eat it again this evening! DH and I enjoyed this recipe, which we easily scaled down to feed 3 (we are just PIGS with this type of food) and we ate the entire thing!
I really didn't find it to be too much work, a little more than the average casserole, but oh so worth it. I'd give this 10 stars if I could! LOVED IT!
