Very good and refreshing. My only 'problem' with the drink was the fact that pineapple just does not crush very well - it was too fibrousy and chunky to enjoy simply crushed. I think pureeing it may be a better way to go.

I actually had some fresh mint hiding in the garden. My pineapple was really ripe and it was easy to muddle everything together. Next time I will add more than a dash of pineapple juice; I like my drinks not quite as strong.

I really wanted to use fresh pineapple for this so I had to wait until one went on sale. (I am not paying five dollars for one!) I knew I would like this one since I love pineapple. I had to wimpify (word to be added to Webster's dictionary soon, lol) my drink by adding more juice. Thanks for another great mojito, Boomie! Made for Beverage Tag.

Absolutely fantastic!! What a great variation of the mojito. Loved the touch of brown sugar and the slight mint flavor was surprisingly compatible with the pineapple. I loved this. Boomie, always fun to try one of your recipes!

Made this for DH as I'm not a Rum lover! He said it was very good! Have to say it is a lot of work for just one drink so will probably save for ocsasions when we have other rum drinkers.

This is delicious! I love anything with pineapple in it and this didn't disappoint. It kind of reminded me of a pina colada only without the coconut. So not really anything like a pina colada really...??! I could have done with less sugar and will probably make in future with just 1 tsp. If I'm feeling lazy I'll also try it again with just pineapply juice and rum. An excellent recipe - thanks Boomette1!!

I also made this for my DH as he loves rum more than me. I took the easy way out and used about 4oz of pineapple juice. I used my morter to grind the mint with Splenda brown sugar and then I shook it all together. My husband LOVED it! I thought it was good too...I think the brown sugar is what gives it the best flavor. The only thing is...don't look to closely at it ...it's kinda looks like swamp water LOL. Made for 1-2-3 hit wonders.

This was a very good drink, but you have to like mint flavoring in your cocktails. I love pineapple & drink rum all the time, but the mint was too strong for me. Enjoyed the one drink & so did my husband, but probably won't make again because of the mint. Guess Mojitos just aren't my cup of tea (or rum). Made for ZWT5.
