YUM-O! I made these exactly as written, and they are EXCELLENT! Step #1 is the key to making these turn out right. If you think you've squeezed out enough moisture, squeeze harder! The mozzarella gives such a wonderful flavor...so different from normal zucchini patties/cakes. I also found that I prefer the seasoned salt to the Old Bay that so many people use in their patties. My Mother-in-law who gave me the zucchini and has been making patties for YEARS asked me what was in them to make them taste so good! After you make this one, you won't need to make any other.

I predict that this will be one of those recipes that go down with many many 5 star reviews! Totally awesome! I have made something like this before but never with the garlic or cheeses. The first bite was heaven! I cut the recipe in half because i only had 2 cups of zucchini, but used 2 eggs because I thought it needed to be wetter. I took the last of the patties over to my daughter and told her to close her eyes and open her mouth...before I knew it there were 3 kids surrounding me munching on them too...all with happy faces! Thanks for sharing ANOTHER 5-STAR RECIPE KITTENCAL!!

This is a five star recipe, Kittencal! I have made it twice in the last three weeks & they go so fast I can't even get a pic to post! The first time I made as directed. I used scallions for the onion component, EXTRA garlic, chopped parsley. When I made them last nite I did the same as above & I added fresh garden basil ribbons to the mixture, which heightened the flavor even more! I can't say enough about this recipie... SUPERB! A million thanks for posting it.

Wowzer !!! I love love love these. I pretty much don't eat any vegetables, but will be making these many more times. I always try your recipes first when searching a category. You are the BOMB !!

I'm fairly disappointed with all the many star reviews but clearly for DH and I this one wasn't a 5 star. I suggest you cook them immediately after mixing together or it creates extra liquid. I found they absorbed too much oil and a higher heat would make them too dark. I liked the idea though.

These are delicious, and for something to do while i was frying i mixed up whatever floats your boat brownies..eekkkkk.. You are right, zucchini never tasted so good lol

Absolutely incredible, and will totally stand in for my beloved potato latkes. I discovered, mid-cooking, that my husband had eaten all the shredded mozzarella, so I used a blend I'd bought at the supermarket of shredded asiago and parmesan, and it was spectacular! Thanks!

Delicious! I didn't squeeze them enough but next time I will. But it was so yummy! The skillet I used at first didn't work out for the patties. It sticks to the bottom and all the good part was stick to it. So I add to change. I used a skillet with lines and this was better. Be sure to put enough oil. I have leftovers and I'm so happy about that :D Thanks Kit

These are WONDERFUL! These have taken the place of our traditional boring fried zucchini slices! The flavor is wonderful and you can add or subtract seasonings based on preference with great results. I have made these several times now and I've learned it is VERY important to squeeze out as much water as you can. I squeeze several times, then blot with paper towels, otherwise they can get a bit mushy (still good, but mushy). Thank you very much for making zucchini a treat for us Kittencal!
