I wanted to try it with the hot red pepper but at the last minute I decided to omit it. Cause I wanted DS to be able to eat it. I used maybe a little bit more of sweet red bell pepper. I didn't add salt. And no extra parmesan was needed. I cooked the veggies in a frying pan like mentionned. And finish cooking in the oven. I loved how easy this was and the taste was great.     Reviewed during ZWT4 I loved the mixed onions and capsicums together. I didn't add the hot pepper as my husband doesn't like them. I did add some pepper though. Great directions. I cooked mine in nthe oven and it set beautifully. Added some extra cheese on top

    Thanks for posting, Redsie. I too have tried this...a few weeks ago, and forgot to review it. I liked the frittata just fine, and it's something I will do again in my whirlwind of breakfast rotations. It's tasty, filling, and easy to break down into one serving, which is something I'm always looking for. Like most all frittatas, it's a very versatile recipe. I have since done variations...mixed in 1/4 C. cooked hashbrowns, or a couple of slices of crumbled bacon. I just love eggs, so this one is a keeper. BTW, I also added a bit of evaporated milk, as I always do with my egg dishes. Thanks, MarraMamba.

    Made this in the oven. This made for a nice light lunch! Added more sweet peppers and did add a bit of milk. Also, lots of pepper!! Thanks Marramamba!

    Nice breakfast! I made this leaving out the hot pepper(I couldn't find them), and scaled the recipe back, using 2 eggs. I enjoyed the flavors of the parmesan and fresh tomatoes. Thanks!

    I think we would have liked this except for the parmigiano reggiano cheese. It overpowered the frittata and didn't compliment the eggs for our tastes. On the plus side, I liked this cooking method for Frittatas better than the oven method that I've used in the past. Thank you for posting Marra. Made for ZWT, please see my rating system as I rate tougher than most.

    I made half the amounts posted for a delicious lunch, and using red and yellow onions. Loved the cheese and onion combination in this recipe - and the colours are beautiful! Made for ZWT Marra - but I will be making this again! 5 stars for an honest recipe review - this recipe was well written, with alternative cooking methods and delivered on taste as well as looks!!     This made a very good Saturday breakfast for DH and me this morning. I used a combination of green and red onions. The sweet pepper happened to be orange. The recipe reduced well for the 2 of us. I did use the plate and flip method.
