I'm always impressed when a recipe is quick to make and tastes good. This recipe is impressive! I never would have thought of using a can of buttermilk bisquits as dumplings. They worked great. Scared me a little when I saw how many spices were in the recipe but I went ahead and followed the recipe (except for the tomatoes). I didn't have any Italian Seasoning so I checked recipes on 'Zaar and found Italian Seasoning - I now have enough Italian Seasoning to make Chicken & Dumplings one more time soon. Thanks for posting. This was outstanding. As suggested by another reviewer, I did cut back on the Italian seasoning (only used 1 1/2 tablespoons), other than that I didn't change a thing. Thanks for sharing a great recipe. I chose this for Fall '07 PAC.

This was soooo good when it was so cold the other day! I only used 2 Tbsp of Italian seasoning and I also substituted a can of diced tomatoes for the cherry tomatoes since I didn't have any. It turned out great and was very quick to prepare. Thanks for posting this one Crazy Granny!

I love my mom's chicken & dumplings so when she submitted a dumpling recipe using contest ingredients my first thought was "oh no!". Who puts red onions or cherry tomatoes in dumplings along with Italian Seasoning by the tablespoons? I really expected to be disappointed. While these are not her classic version, they are GOOD! I made them twice during the review period of RSC #10 because they are fast, easy, and tasty. It is a creamy italian flavored soup with the bonus of dumplings. Yum! The first time I followed the ingredients & instructions to the letter. The second time I cut the poultry seasoning by half and used two cans of smaller biscuits. The result really is colorful in the bowl and although 3 tablespoons of italian seasoning seems like a lot it doesn't overpower anything. I consider the recipe a keeper and thought the chef did an excellent job coming up with creative entries for her first RSC. Way to go Mom!!!

I used home-made chicken broth and a packet celery soup and then added my cooked chicken and vegetables; I also added peas and carrots as you suggested this soup would be great for leftovers! As I cannot get buttermilk biscuits in France - I made my own buttermilk dumplings.......as you can see from the photo, they worked perfectly and proves that this recipe is VERY versatile, no matter where you live in the world! My husband is not a great lover of too many herbs - so I cut back on the Italian seasoning to 1 tablspoon, we still got the Italian flavour but it was subtle. I also had to use creme fraiche, I had no cream available - and although the soup may not look as creamy as Andi of Longemeadow Farm's photo - it was quite creamy and EXTREMELY tasty! I hope that I have proved that a great idea for a recipe can be adapted to personal tastes and geographical areas - a lovely RSC recipe Crazy Granny - what a GOOD baby you have been! Since I can not make dumplings that are edible I had to try this recipe. For us I would cut back a little bit on the italian seasoning and we enjoyed the cracked pepper. Liked the sweeter flavor of the red onion with the other vegetables and neat idea using the buttermilk biscuits! Easy and tasty recipe, thank you chef and good luck.

This was a real treat for us. Sunday is a day I am looking for fast and easy. After spending a good time in the gardens we are tired. I turned to this recipe as a good source of nourishment and comfort. This was a wonderful addition to RSC 10 contest. The recipe went together easily, and hand most things right on hand. One small change is that I had to use Bisquick for the dumplings instead of canned buttermilk biscuits and worked out perfectly. I did follow this recipe to a "T" including softening vegetables in microwave. Normally I I would of softened the vegetables right in the pot, but wanted to make the recipe as written. Our soup was a perfect consistency, not to thin, not to thick. I even used the 3 tablespoons of Italian seasoning with no adverse taste. All in all a great recipe. Best of luck, chef!

5 Stars, comfort food that was quick and easy, made my Pennsylvania Dutch MIL feel right at home. DH urged me to include at least twice as much cooked chicken next time, but that was before we ate. As it was, we were all pleasantly full, thanks to the buttermilk biscuits. Although there was a lot of Italian seasoning, the net effect was good full flavor. I followed the directions precisely. I made this at home and carried in the stockpot to MIL's house 20 minutes away; it was still hot, and the biscuit topping did not suffer from the ride. I was surprised by how much I enjoyed this dish; I normally steer clear from heavy cream combined with cream of whatever soup. This goes in my Frequent Repeat pile of Zaar recipes. Too much of the Italian Seasoning, 1 can of chicken for 4-6 servings is not much. A little soupie for my taste. Can of chicken drained or not?
