I salted the cucumbers & put them in a colander for 20 minutes to get rid of water. Wash off well. I also used dill instead of parsley and added a bit of red onion instead of caraway seeds. Perfect for side dish.

    Cucumber salads have long been a summertime favorite and it seemed that I'd managed to try every lowfat variation there is; so it was fun coming across this one which is has a lovely twist with the addition of pepper and caraway. Admittedly, I was just a wee bit wary of the caraway as it is a spice that I enjoy in small amounts but often find stated amounts to be too much for my tastes. That was not the case here as it was just right and pleasantly balanced by the pepper and parsley. I did not press my cucumbers as suggested since they were travelling with me. Instead they mixed in the container with the dressing for three hours. Just before serving, I drained the bowl and lightly pressed on the cukes with a fork. Marvelous and definitely now featured in my sanck rotation. Thanks FT!

    An outstanding cucumber salad with a wonderful combination of sweet and sour. I used a seedless cucumber and sliced it paper thin using the food processor. The cucumbers were arranged in a bowl and after pouring the vinegar mixture over the cucumbers, I placed a smaller bowl filled with ice cubes on top. They were placed in the refrigerator and enjoyed after about 45 minutes. This will be a repeat recipe. Made and enjoyed for ZWTIII.

    I had a recipe for cucumber salad I'd used for years that I thought was pretty good. Until I tried this one. This is most definitely superior. I don't care for caraway seeds, so I left them out. The chopped parsley is a particularly inspired touch in this salad, it seems to enhance the cucumbers' flavor.

    Loved this salad. I didn't add the caraway to the whole salad, but just sprinkled it on some portions. I liked it both ways. I've made similar salads, but this one was just a bit different and very enjoyable.

    A DIFFERENT and WONDERFUL cucumber salad! I used 2 peeled cucumbers, fresh parsley, 2tsp coarse ground black pepper, sea salt, Splenda Granular, white balsamic vinegar and the optional caraway seeds. I think the parsley and caraway are what make this salad special and it's a great breath freshener! Made for the Holiday Tag game. Thanks for inviting Freddy Cat by for a visit French Tart!

    This is a very good recipe. I followed ingredients per recipe but I forgot to put in the parsley. I did not use caraway seeds.
