Great dish M! And it couldn't be any easier, could it? I chose to kind of slather the pesto on the chicken, after I seasoned the chicken w/ salt and pepper. Baked for 25 minutes, then since I only had 1 tomato, I also topped with 1 whole roasted red pepper, sliced. Then topped with mozz mixed with some fresh grated parm. Served with salad and some fresh baked pesto baguettes, it was an easy, flavor packed meal. The chicken also stays very tender and juicy cooked this way. Thanks M!

I had an old friend come to visit tonight so I offered to cook dinner. I decided to try this little number out and it was pleasing to all. The chicken came out tender with a great flavor. I did not have the tomatoes but the mozzarella added a nice touch. I used classico traditional basil pesto and cooked it for about 35 minutes total. We served this up with a nice salad, and I made Richard a baked potato to fulfill his mantite. The only draw back to this recipe was it continuously set off my smoke detector.

It was delicious AND easy that I will use for weeekday dinners. Everyone loved the dish that we had no left overs. Chicken came out very moist and tender. There were more tomatoes than to cover over the chicken, but I baked them anyways. It complemented the chicken and rice. The slightly baked juicy tomatoes went really well with the melted olive oil from pesto. We had steamed vegetables on the side.

This recipe was great! I didn't follow the exact amounts of the ingredients, but the combination was delicious. Next time, though, I will probably use tomato slices on top of the chicken under the cheese so that it is easier to get a little bit of everything in one bite. Thanks!

What a fabulous recipe Mermaid. No one who ate this could stop raving about it. I used goats cheese on top of mine and the flavour combination was simply divine. A great quick and easy dish that I will definitely be making again.

I tried a dish like this years ago at applebees i still talk about how the dish it was called "Tuscan chicken" I've tried to make it myself a few times and it just didn't work, But this did it was AMAZING! Thank you so much now i can make this great dish that was only a short lived special! It is a great dish for guests as it looks great and tastes even better!!! Thank you Thank you Thank you for posting this! I INSIST if you are thinking about making this to DO IT you wont regret it!
