My first ever pumpkin risotto! I microwave the pieces of pumpkin for 5 mins while I prepared the onion and garlic. So when I added it in, it just melted into the rice which meant that my daughter couldn't pick it out! lol The flavours were amazing and it was devoured in record time. Next time I'll double the recipe! Thank you so much xxx

easy and tasty!! Just remember to cut the pumpkin into small pieces. I cut into chunks of about 1cm and they were perfectly cooked by the end =)

Very nice with whichever pumpkin you can find. Easy to make and my son loves it. I added half a cup of dry wine instead of the first cup of stock and worked very well.

Just finished eating this a few minutes ago. Tasted amazing, I was quite suprised at how much i enjoyed something that I cooked for myself. My girlfriend likes me to cook for her every now and again and I am sure she will love this!

Oh, wow, this was soooo good. Dh usually refuses to eat anything with pumpkin in it but I talked him into taking a bite and he loved it. I was really worried it would be bland and hubby is a really meat guy so I browned some ground sausage and added it at the end. This was so flavorful. Also, I used cilantro instead of parsley as that was what I had on hand. PS - for those that don't know what 15 g of butter is... it's 1 tablespoon...

Thank you Dale THIS IS A GREAT RECIPE!My husband and i loved it.Its nice to have something other than just plain rice.I cooked my Butternet seperately and added Froz mix veg (i did'nt have any mushrooms)It gave the rice some extra colour.yum will keep this one

This was really nice, and I found it simple to make. I'll be making this again. Some walnuts or pistacios would go nice in this too

Thanks for an awesome recipe. This went down very well with my husband and I thought it was delicious too. I had to add an extra cup of stock but I think that might be because I had the heat up a little too high to start off with.
