This is so simple and so satisfying. You would think it would taste a bit dull, with so few ingredients, but the flavor of sauteed onions is so rich, it tastes really good. (I love sauteed onions). A Chinese-American former roommate taught me this recipe. She was eating it and it smelled so good I asked her to show me how to make it. The only difference is that she taught me to take the egg out of the pan as soon as it is cooked so it doesn't burn, cut it into pieces, and add it back in to heat it just at the end of cooking. I always use leftover rice and more onion, and I add sriracha chili sauce as I eat it. A big bowl of this hits the spot when you are tired, cold, and hungry, or if you are short on cash or haven't shopped in a while.

I just made this rice with some chicken egg rolls for dinner. It was a last minute decision so I chose your recipe for the ease and speed of it. I should have doubled the recipe! My daughter ate it like she would never ever see rice again. (she adores rice of any kind) Only one little change and that was just because it seemed like it would go so well with the recipe. I had to follow my instincts and added about 1/2 teaspoon ground ginger to the mix as it was cooking. It turned out excellent and I will certainly use your recipe again. Probably everytime we do Oriental now. Thanks for a great addition to our meal.

This was good and easy to make. I followed the recipe as written but next time I would also add peas and carrots. This was my first time making fried rice and my family was impressed. They did notice it didn't have the veggies though.

Great easy recipe. I actually had a carton of cooked rice from chinese takeout earlier in the week, so I just used that. Tasted great!!! Next time I might add some frozen mixed vegetables...

Way to go Charlotte. Great taste and fast too. I had some leftover pork I added in just to make DH happy. I also added some minced garlic as well. This is a keeper

Great, quick side dish when you want a simple yet tasty fried rice as a side dish. I added garlic and ginger. I served it with tuna steaks and steamed veggies. Thanx for sharing. I'll be making this again.

Very good and easy fried rice! I doubled the recipe and used green onions and fresh mushrooms! Its a keeper, thanks Charlotte!

I made Chinese Five-Spice Turkey Burgers tonight and needed something quick to go with it. I happened upon this recipe and was skeptical such a simple dish could taste so good but it was absolutely delicious! My only (tiny) adjustment next time would maybe reduce the butter to 1 1/2 TBS but that would be it. I may even throw in some bacon and make a meal of it. Thanks SO much for a great side dish

I made this recipe for the first time tonight, and it was great! It was so good, that I actually took the time to review it! The only changes I did was I used real rice, not minute rice, added more eggs, and more veggies. Definetely recommend!

I changed the recipe a little bit to fit my tastes. No onions, and about half of the other ingredients, plus I didn't have minute rice so I used regular rice, anyway, it turned out very yummy and I will be making it again. Thanks for sharing this!
